Elote Nachos
Ingredients
Street Corn Mixture:
1 tub Pancho's White Queso
1 tablespoon olive oil
½ red onion, finely diced
2 jalapenos, finely diced
1 clove garlic, minced
2 cups corn
1 teaspoon chili powder, plus more for garnish
½ teaspoon cumin
½ teaspoon salt
Pinch of black pepper
Juice of ½ lime
Scallions, thinly sliced, for garnish
Cotija, for garnish
Nachos:
Tortilla chips
Chili powder
Jalapeño slices
Fresh cilantro, for garnish
Directions
In a large skillet, add the oil, then saute the red onion and jalapenos until soft. Add the garlic and cook until fragrant, about 30 seconds
Add in the corn, seasonings, and lime juice, and stir until warm
Pour in the Pancho's, and stir until warm and well-combined
Top with the scallions, cotija, and more chili powder
In a bowl add torilla chips and top with steet corn
