Cheesy Taco Rice

Ingredients

  • 1 lb of ground beef

  • 1 small white onion, diced

  • 2 tablespoons Taco seasoning

  • 1 10 oz can of Rotel (diced tomatoes and chopped green chiles)

  • 1 8 oz can of tomato sauce

  • 1 ½ cups of beef broth

  • 1 cup of long-grain white rice, rinsed

  • 1 cup Pancho's Original Cheese Dip

  • Pico de gallo

  • Fresh cilantro, minced

  • Pancho's Everything Sauce

Directions

  1. In a large skillet, add a small bit of oil, then brown the beef and season it with the taco seasoning. Add the onion and cook until soft. Drain the excess fat, or blot it out with a paper towel.

  2. Add the Rotel, tomato sauce, beef broth, and rice.

  3. Stir well, cover with a lid, and cook on medium-low until the rice is fully cooked, about 15-20 minutes.

  4. Drizzle the Pancho's on top and stir to combine.

  5. Garnish with the pico, cilantro, and everything sauce.
